1 lb Boneless, Skinless Chicken Breast or Thighs, cut into 1-inch cubes
1 medium Onion, chopped

1-inch piece Ginger, grated
1 can (14 oz) Diced Tomatoes
1 can (13.5 oz) Coconut Milk
2 tbsp Curry Powder
1 tbsp Cooking Oil or Butter
Salt and Black Pepper to taste
Optional Garnish: Fresh cilantro, chopped
Method
Heat oil or butter in a large pot or deep skillet over medium heat. Add the chopped onions and cook for 3-4 minutes until they are soft and translucent.
