Ingredients
1 lb (450g) Salmon Fillet: Fresh or frozen, skin-on or off.
1 Head of Broccoli: Chopped into florets.
2 Carrots: Sliced or chopped.
1 Red Onion: Cut into wedges.
1 Bell Pepper (any color): Sliced.
1 Lemon: Sliced for garnish.
2 cloves Garlic: Minced.
2 tbsp Olive Oil
1 tsp Dried Oregano
1 tsp Dried Dill
Salt and Black Pepper to taste
Method
Preheat your oven to 400°F (200°C).
On a large baking sheet, toss the broccoli, carrots, red onion, and bell pepper with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer.
In a small bowl, mix the remaining 1 tablespoon of olive oil with the minced garlic, dried oregano, and dried dill.
Place the salmon fillet in the center of the baking sheet, nestled among the vegetables. Brush the herb mixture evenly over the salmon.
Arrange the lemon slices on top of the salmon.
Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
